1 cup of rice in cold water until it runs clear — not because it needs cleaning (every grain is rice) but to wash off surface starch, the thing that makes rice gummy.
Warm 1 tbsp oil in the pot, add the drained rice, stir 30 seconds. This coats each grain and keeps them separate as they cook.
Add 1½ cups water and ½ tsp salt. Stir once, then bring to a full boil.
Lowest heat, lid on tight, 15 minutes. No peeking, no stirring.
Off the heat, still covered, 10 minutes. Then fluff with a fork — not a spoon.
